Cheesy Chicken and Rice

2 cups instant rice (1 small package will do fine)
2 cups frozen veggies (or fresh/canned)
.9 to 1 pound chicken breast (or thigh if you prefer)
5 slices American cheese (or maybe try some other flavor)
6 cups water

With two cups of water and the two cups of rice, follow the directions on the package; it should tell you to bring the water to a boil, stir in the rice, then cover and remove from heat for five minutes. Fluff with a fork.
With two more cups of water and the two cups of veggies, boil until heated thoroughly. Drain.
Cut the chicken into small strips or pieces, and boil in the remaining two cups of water. Drain.
Begin mixing the rice and cooked, drained veggies in a skillet on medium heat. Tear the pieces of cheese into small parts, adding slowly and mixing until melted. Add the chicken, mixing thoroughly. Finish adding the cheese, and lower heat to low if any sizzling occurs. Mix until all the cheese has melted entirely.
Serves 3 to 4.

Yummy, you shall enjoy. ^_^ Brian was very thrilled with it. But then again, he loves his cheese.

Uhmm... so, Debbie moved over here, and now so did Lauren. I've been reluctant to return here for the simple fact that I can't "friends only" posts, and who knows who still lurks around here, so yeah. =) I will probably post little bits and pieces of my life here. Actually, whatever I can leave public on GJ is what I'll make public here. Sound good? ^_^ I think so. I'll have to tweak this around sometime over the weekend. Weee! I'm baaaack!

Holy crap, wait... I *CAN* protect entries... I'll have to see what that's all about. Perhaps I can keep you informed. Woohoo!
